An organic Cornish farm producing amazing ice-cream
All our tasty ice creams, fudge and yoghurt's are made using rich organic Jersey milk and cream and taste both indulgent and delicious. The milk comes from the 94 strong herd of Jersey cows which graze on pastures that have been farmed in a traditional and sustainable way for generations. Time, knowledge, creativity and hard work are at the heart of what we do. Crafted, skilled and innovative ice cream artisans simply strive to make us taste the best.
It does not matter which of our ice creams or fudge you try, they all share a rich, delicious flavour because they are all made with organic milk and cream from our freely-grazing Jersey herd. Combine these raw materials with the finest Italian equipment and you get what the Italians call artisan ice cream, full of flavour and texture. We make many of the ingredients here, too; you can really taste the freshness - and the lack of preservatives - in our fresh fruit jams and in the distinctive smoothness of the fudge in Caramel Crunch. Even the water in our sorbets comes from the farm's spring.
The cows are milked twice a day, starting at roughly 6.30am in the morning and then again later between 4.30pm and 5pm. The milking parlour is a two x four auto-tandem, so called because of the layout and number of stalls and the sensors that allow the automatic movement of cows without the touch of a button. Milking can be watched every day from the viewing gallery between 4.30pm and 5.30pm.
The farm is on the Lizard Peninsula amongst a unique landscape pattern of ancient small fields and stone-faced hedges. Barn owls, buzzards, ravens, three species of bat, several reptiles and many unusual plants and lichens thrive here in the grazing meadows which hold a mixture of native grasses and herbs. Because no artificial fertilizers have ever been used there's a good variety of meadow plants. The low nutrient levels suppress the growth of vigorous grasses and favour less common flowers. The cows graze on the fields during the summer. In the winter they are housed and fed on baled hay and silage which is made in the summer from the surplus grass.
The new milking parlour and the viewing gallery came in 1992. The Croust House restaurant opened in 1993, and the fudge making began the following year. At the same time we started putting Rachel's jams, chutneys and mustards into jars and selling them. We finally got all the production under one roof in 2006.
As well as cows, there are donkeys, hens, ducks and cats on the farm. You can talk to the calves any time, but make sure you wash your hands on the way out. Feed the ducks and moorhens, or just enjoy the peace and quiet of your surroundings.
The Bull Pen Gallery provides a showcase for the furniture and the fused stained glass made on the farm. You'll also find work from other local artists (some of whom work on the farm) displayed, including driftwood furniture, pictures, paintings, ceramics and jewellery.
